Lemon Basil Chicken
2/3 cup olive oil
3 tbsp. plus 1/4 cup lemon juice
1 tsp. grated lemon peel
1-1/2 tsp. salt
1 tsp. black pepper
1 cup basil leaves (lightly packed)
1 large garlic clove
1 pound chicken
Mix all ingredients (except chicken) in food processor. Place chicken and mixture in large plastic bag, and place in fridge for 30 minutes or up to 1 day.
Grill chicken over medium-high heat for approximately 8 minutes per side or until cooked through.
