Summer Salad
Bag of mixed greens
4 oz bleu cheese crumbles
1/2 large red onion, sliced
2 ripe pears - peeled and sliced thin
1/4 cup craisins
Mix all ingredients and toss with Champagne Vinaigrette Dressing (recipe follows).
Champagne Vinaigrette Dressing
1 cup olive oil
1/4 cup champagne vinegar
1/2 cup champagne
Salt and pepper to taste
Pinch of sugar to taste
Mix all ingredients in blender and toss over salad.
