This salad is so easy to prepare that you can plan on
making it minutes ahead of when it’s served! Serves 8.
Ingredients
Two 10-oz packages of mixed salad greens
2 cups of dried cranberries (sweetened)
Two 4 oz. packages of crumbled Feta Cheese (optional)
1 cup of walnuts (toasted and coarsely chopped)
4 Tblsp. balsamic vinegar
2 Tblsp. honey
2 tsp. Dijon mustard
1/2 tsp. ground black pepper
1/2 cup of extra virgin olive oil
Layer the salad greens with the cranberries, cheese and walnuts in a festive, shallow salad bowl. Or use a large platter.
Briskly mix vinegar, honey, mustard and pepper together in a separate bowl. Add the oil in a thin stream to mixture while constantly whisking the dressing ingredients. Blend well.
Pour the dressing over your prepared salad and toss to coat. Serve immediately and enjoy!
