1 pound fresh shrimp, peeled and deveined, tales on
1/2 cup tequila
1/4 cup diced onion
1/4 cup fresh lime juice
1 tablespoon finely grated lime rind
2 tablespoons olive oil
1 tablespoon finely chopped fresh cilantro
1 tablespoon finely chopped fresh parsley
Note: To make it even easier, use pre-cooked frozen shrimp. Just let the shrimp thaw overnight in your refigerator.
Directions for Tequila Lime Shrimp:
In a large pot of boiling, lightly salted water, cook shrimp for about 2-3 minutes, or until opaque. Drain and rinse in cold water; drain well. Set aside to cool.
In medium mixing bowl, combine all of the other ingredients and whisk to mix well. Place shrimp in a large zippered freezer bag; pour marinade mixture over shrimp. Seal bag and refrigerate for 2-4 hours, turning bag occasionally.
To serve, drain shrimp and discard marinade. Place in a chilled bowl nestled in a larger bowl filled with crushed ice to keep the shrimp cold.
Makes about 12 servings.
